Guess What?

I passed with a 90%! I was seriously shocked when I saw how well I did, but I’ll take it. Thanks for all your encouragement and support!

Just FYI – I will be at a craft fair tomorrow {probably today when you read this} selling Scentsy. Come visit me! Here’s the details:

Cream Cheese Banana Cupcakes

I made these for a treat yesterday and they are DIVINE, if I may say so myself.

Banana Cupcakes

  • 1/2 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mashed ripe bananas {I used a little extra}
  1. Preheat oven to 350F. Place 24 cupcake liners in muffin tins.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan.
  3. Bake for approx. 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely before frosting with the cream cheese frosting.

Cream Cheese Frosting

  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups sifted confectioners' sugar
  • 1.5 teaspoon vanilla extract
  1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.

Using an icing piper, decorate cupcakes as desired. Sprinkle w/crushed walnuts. Now…partake of the yummy goodness! ENJOY!!

Halloweenies

Ry & I have been babysitting his cousins for the last 10 days, so I got to hang out with them for Halloween. Between the festive food, the trunk or treat, the amazing donuts and hanging out with some fun kids…I had a blast! IMG_0920 While the boys were working hard on the ranch, the girls decided to play! We went to the mall in Twin Falls for a little shopping and spent some time at the clinique counter pampering ourselves with some makeovers & free gifts w/purchase. Pre-makeover we ate at Chili’s. Post-makeover we shopped til we dropped. It was so fun.

All in a Long Days Work!

Since we’ve been staying with Ryan’s family over the last little while, we were able to help them put up corn. I’ve never done it before so it was a fun experience for me! We picked it from their garden, shucked it, cleaned it, cut it, bagged it, and then froze it. There was SO much corn but the hard work definitely paid off.

It’s The Good Life…

{This is where we’ve been hiding for the last little while. Go ahead, tell me how jealous you are. I don’t blame you!}

You can’t really beat being in the middle of nowhere with the ones you love in an absolutely gorgeous setting. There’s something almost spiritual about it. I can do this for the rest of my life!

Idaho Bound…

On our way out of Maryland, we made a quick stop at one of our east coast favorites…Rita’s. It was a definite must and as always, didn’t fail to disappoint.

We actually plotted our drive home around 1 place and 1 place ONLY…Smokin’ Joe’s in Kansas City. Ryan was so excited to introduce it to me that we took a detour home through KC. He LOVES it! And I must admit, it was everything he hyped it up to be. I got a smoked brisket sandwich and ry got some yummy goodness with provolone & onion rings on it. I must say their bbq sauce is divine! Look at that deliciousness…

After our stop at Smokin’ Joe’s, we went across the street to a grocery store to get ourselves some Blue Bell ice cream. Ry was introduced to Blue Bell on his mission.  I immediately fell in love with Blue Bell when he introduced it to me a couple years ago when we lived in Kansas City. It is so creamy and yummy and delish! Am I making you hungry yet??

Homebound – The Final Chapter

I took my last trip to Canada this summer (yes I’m still posting about summer adventures!! lol) in August. I flew home for a Hartford family reunion - my mom’s fam. Unfortunately we couldn’t make it work for Ry to come so I ventured off alone. It was so fun to reunite with my Aunt Diane & Uncle Doug & my cousin Makayla. I lived with them for a half year up in the Northwest Territories back in 2003 and I’ve only seen them a couple times since. And of course it’s always the best hanging out with my fam.
